POIVRONS FARCIES - GEFÜLLTE PAPRIKA REZEPT

Provençal recipe

Provençals love freshly harvested vegetables. One of the region's most popular recipes is this one. Preparation time: 30 minutes + 45 minutes cooking time.

Ingredients for 4 people:

  • 8 red peppers
  • 1 roll from the day before
  • 75ml milk
  • 1/2 bunch of basil
  • 1/2 bunch of parsley
  • 200 g mixed minced meat
  • 50g bacon cubes
  • 2 eggs
  • 2 small onions
  • 1 garlic clove
  • 3 tbsp olive oil
  • Salt
  • ground black pepper
  • 150 ml vegetable stock

And here's how it works:

    • Preheat the oven to 180°C top/bottom heat (160°C fan/convection oven, gas mark 2-3). Clean and wash the peppers . Cut off the tops, then remove the seeds and ribs. Place the edible part of the pepper tops in a bowl.

    • For the filling , roughly chop the bread roll and soak it in the milk for a few minutes. Meanwhile, wash the basil and parsley and shake dry . Pick off the leaves and finely chop. Squeeze the bread roll dry and mix it with the minced meat, bacon, eggs, and herbs in a bowl.

    • Peel and finely dice the onions and garlic . Heat 2 tablespoons of oil in a pan and sauté the garlic cubes over medium heat until translucent . Add to the mince mixture in the bowl and mix. Season generously with salt and pepper.

    • Grease a baking dish with the remaining oil . Arrange the pepper halves in it and fill with the minced meat mixture.

    • Puree the remaining bell pepper pieces with a hand blender . Season with salt and pepper. Spread the mixture on the sides of the vegetables in the casserole dish and bake in the middle rack of the hot oven for 40 minutes. Then serve the vegetables in the dish.

    • Mashed potatoes or rice go well with it.
